Amelia's Blog

Congratulations to our Amelia!

As a nominee for the Luxury Entrepreneur of the Year Award, Amelia was caught totally off guard when she was announced this year's winner last at the Luxury Law Summit Awards. She was glad no acceptance speech was required but later thanked all the people that had held her hand when times were tough, reminder her to laugh when she needed to and for loving her chocolate! Amelia dedicated her award to the late Pat Reeves - her 'chocolate diamond geezer'.

MALDON SEA SALT A MAGIC INGREDIENT

Maldon sea salt is one of Amelia’s magic ingredients for her chocolate creations. As it’s one of her favourite ingredients it finds its way into plenty of her recipes. Amelia grew up in Layer Marney which is about 20 minutes away from The Blackwater Estuary, Maldon and the home of the finest sea salt. Once an Essex girl always an Essex girl! Maldon sea salt started up back in 1882 and by 1900 was supplying Harrods and Fortnum & Mason. In 1922 the Osborne family bought the company and they still own it today. To form the salt crystals sea water is filtered and then boiled. The crystals, we buy and Amelia blends into her recipes, are then ‘drawn’ from...

AWARD WINNING CHOCOLATE

Award winning chocolate has to be good ! I was delighted to discover that two products from my range had been awarded Bronze by the Academy of Chocolate this year: Academy of Chocolate - Bronze AwardThe Academy of Chocolate, whose Patron is Michel Roux, is an organisation which is involved in educating professionals, manufacturers, buyers, the media and consumers about the importance of using top quality chocolate and ingredients. I have been fortunate enough to win awards over years. Most recently I have been invited to be one of the judges which I thoroughly enjoy. There is a load of wonderful chocolate to taste and it is interesting seeing the two sides; as an entrant and then as a judge....

MILK CHOCOLATE GIFT IDEAS FOR FATHER’S DAY

Would you like a little help with selecting seriously delicious milk chocolate gift ideas for Father’s Day ? A special day to celebrate with your Dad or ‘adopted’ Dad. I admit to my father being a milk chocolate fan. Over the years I have managed to convert him from consuming his favourite Toblerone to my single origin milk chocolate bars !The milk chocolate I use in the range is single origin and made using Arriba cocoa beans grown in Ecuador. It has a wonderful slight caramel flavour to it and leaves you with a very clean end note which means you can just have a chunk or two and not consume the whole bar!If you would like to spend around...

DARK CHOCOLATE GIFT IDEAS FOR FATHER’S DAY

Anyone struggling for dark chocolate gift ideas for Father’s Day? Here are a few of my suggestions for any Dad’s or ‘adopted’ Dad’s who love seriously special dark chocolate. For a simple and delicious treat for just over £10 (excluding delivery) what about a chocolate bar duo; either one already on the website or perhaps taking the delicious, rich and intense single origin Dark Edition 03 (75%) and pairing it with one of the dark salty charmers ….. Dark Honeycomb & Sea Salt, Dark Hazelnut & Sea Salt or Dark Sea Salt. If they are not fond of sea salt then it has to be the award winning Dark Ginger or Dark Mandarin. Do just ask me to ribbon any selection...

WHAT DEFINES HANDMADE CHOCOLATE BARS?

What defines hand-made chocolate, in particular, hand-made chocolate bars?  This question frequently springs into my mind. Nowadays, what exactly defines hand-made is a grey area, and many mass produced products still hang on to the reference that their products are hand-made.  What is the producer’s perception of hand-made? What is the customer’s? Does hand-made reflect quality? Does it define a small, artisanal business making goods at home? Can you maintain consistency and meet market demand if you remain truly hand-made? In the early days I referred to my bars as being hand-made. After all, the inclusions were stirred into the pre-tempered chocolate, or added in as the chocolate went into the moulds,  then hand-foiled, and outer-wrapped by hand, too. But...

MY CHOCOLATE BUSINESS – THE EARLY DAYS

How many of you dream of setting up a chocolate business?  My chocolate business in the early days was very different from now.  I began Amelia Rope Chocolate very much as a bespoke chocolate business.  All the handmade chocolate truffles and unique crystalilised chocolate dipped flora were made to order. Did I see myself setting up a chocolate business? The simple answer is no I didnt! I found myself creating Amelia Rope Chocolate really by chance back in 2007.  I had always loved cooking, eating bounteous amounts of chocolate and creating designs.  I watched the gorgeous Juliette Binoche and divine Jonny Depp in ‘Chocolat’ many many times and ……… well my chocolate business is very different from the movie but...
