MALDON SEA SALT A MAGIC INGREDIENT

Maldon sea salt is one of Amelia’s magic ingredients for her chocolate creations. As it’s one of her favourite ingredients it finds its way into plenty of her recipes. Amelia grew up in Layer Marney which is about 20 minutes away from The Blackwater Estuary, Maldon and the home of the finest sea salt. Once an Essex girl always an Essex girl! Maldon sea salt started up back in 1882 and by 1900 was supplying Harrods and Fortnum & Mason. In 1922 the Osborne family bought the company and they still own it today. I have been fortunate enough to win awards over years. Most recently I have been invited to be one of the judges which I thoroughly enjoy. WHAT DEFINES HANDMADE CHOCOLATE BARS?

What defines hand-made chocolate, in particular, hand-made chocolate bars?  This question frequently springs into my mind. Nowadays, what exactly defines hand-made is a grey area, and many mass produced products still hang on to the reference that their products are hand-made.  What is the producer’s perception of hand-made? What is the customer’s? Does hand-made reflect quality? Does it define a small, artisanal business making goods at home? Can you maintain consistency and meet market demand if you remain truly hand-made? In the early days I referred to my bars as being hand-made. After all, the inclusions were stirred into the pre-tempered chocolate, or added in as the chocolate went into the moulds,  then hand-foiled, and outer-wrapped by hand, too. But...

MY CHOCOLATE BUSINESS – THE EARLY DAYS

How many of you dream of setting up a chocolate business?  My chocolate business in the early days was very different from now.  I began Amelia Rope Chocolate very much as a bespoke chocolate business.  All the handmade chocolate truffles and unique crystalilised chocolate dipped flora were made to order. Did I see myself setting up a chocolate business? The simple answer is no I didnt! I found myself creating Amelia Rope Chocolate really by chance back in 2007.  I had always loved cooking, eating bounteous amounts of chocolate and creating designs.  I watched the gorgeous Juliette Binoche and divine Jonny Depp in ‘Chocolat’ many many times and ……… well my chocolate business is very different from the movie but...

CHOCOLATE BANQUET

A chocolate banquet was exactly what I experienced during Chocolate Week.  I was co-hosting a dinner with Berry Bros & Rudd … the theme was: chocolate. We started with a glass of R&L, Legras Rose Champagne which was accompanied by the most delicious parmesan and cacao wafer.  The saltiness from the cheese balanced perfectly with the cocoa nibs. It was then time for us all to head down to begin the dinner.  An amazing sight greeted us all …….  The banqueting table in all its splendour ! The starter was seared scallops on a white chocolate risotto with caviar sauce.  The white chocolate was so subtle – it accentuated both the sweetness of the scallops and saltiness of the caviar.  Sadly I was talking too much...
